<p>The famous aceto, is made with cooked must that comes from the grapes of the area, this is allowed to age for a long time. The main effort is made in the last stage, in which small barrels of different woods are used: oak, mulberry, chestnut, cherry, juniper and ash. During the maturation process the contents are changed and mixing with them with younger vinegars in increasingly smaller barrels, following some guidelines and secret rules that pass from generation to generation within the elements of an elaborate family.</p>
